Pay Range: $70,000-$90,000/year DOE

GENERAL SUMMARY:

The Resort Chef is responsible for the food and beverage product, execution, and service in all F&B Outlets and Banquets for Alderbrook Resort & Spa. Responsible for executing an innovative culinary program and delivering culinary experiences that draw from our natural setting to intrigue and engage guests and media. This position works closely with the Food & Beverage Manager to develop the team needed to deliver this culinary vision and capitalize on Alderbrook Resort & Spa’s authentic differentiating points. The Resort Chef will maintain a culinary program unique in the Pacific Northwest Resort environment.

ESSENTIAL FUNCTIONS:

  • Oversees the operations of the kitchen and back-of-house, ensuring that food is prepared safely, efficiently, and according to specifications or request.
  • Establish a good working relationship with all Front of House team members.
  • Prepare the kitchen and restaurant staff to successfully serve the resort and local guests.
  • Establish yourself with resort and local guests as the chef of Alderbrook Resort & Spa.
  • Provide a regular presence in the Restaurant, with a sophisticated stature, portraying leadership and a possessing a genuine interest in engaging guests and articulating the unique nature of Alderbrook’s culinary program.
  • Ensure that the kitchen produces the product at consistently exceptional standards.
  • Improve the culinary skill set to achieve a level of talent which contributes to the long-term goals for Alderbrook and adds to the reputation of the Restaurant and Catering as a culinary destination.
  • Contribute to and participate in the ongoing food and beverage promotions.
  • Collaborates with specialty chefs on menu items—for example, works with pastry chefs to design an innovative, appealing, and complementary dessert menu.
  • Establish a “lead by example” environment in all aspects of front- and back-of-the-house service. Fosters a good working relationship and teamwork between front and back-of-house.
  • Work with Food & Beverage Manager to accurately forecast food consumption and requisition for accurate food purchasing program.
  • Work with Food & Beverage Manager to select and develop recipes; establish presentation techniques and quality standards.
  • Works with Food & Beverage Manger to create and modify the restaurant’s menu based on food trends, food costs, patron requests, and seasonal availability.
  • Maintains and inspects kitchen equipment and utensils, recommending repairs or replacements as needed.
  • Work with Food & Beverage Manager to plan for long-term capital expenditure needs.
  • Ensures kitchen runs in accordance with all applicable health, safety, and hygiene codes and standards.
  • Adheres to the Resort’s Accounting policies and procedures.
  • Work with Food & Beverage Manager to oversee food cost and quality for all F&B outlets and banquets.
  • Works with Food & Beverage manager to achieve profitability goals by driving revenues and controlling costs.
  • Maintains Kitchen Budget.
  • Work with Food & Beverage Manager to establish and maintain effective standards, measurements, and controls for the Kitchen.
  • Collaborate with local farmers to enhance the culinary program.
  • Other duties as assigned

SUPERVISORY RESPONSIBILITIES:

  • Trains and/or oversees training of kitchen staff.
  • Schedules kitchen staff, assigning roles based on experience and skills.
  • Supervises work product from kitchen and back-of-house staff.
  • Conducts performance evaluations that are timely and constructive.
  • Handles discipline and termination of employees as needed and in accordance with North Forty Lodging policy. Ensure all interactions with and between coworkers are conducted in a highly professional and efficient manner
  • Ensure a safe working environment and attitude on the part of all employees in areas of responsibility

EDUCATION and/or EXPERIENCE & REQUIREMENTS:

  • Relevant experience or training, which may be demonstrated via degree or certificate, completion of apprenticeship, or other experience necessary to become trained as a highly skilled professional cook.
  • At least two years of culinary managerial experience required.
  • Business and hotel experience preferred.
  • The position requires knowledge of Microsoft Office Products (Excel/ PowerPoint / Word / Outlook).

COVID-19 REQUIREMENTS:

COVID-19 Vaccination Requirement

North Forty Lodging LLC requires team members to be fully vaccinated against COVID-19 (fully-vaccinated as defined by CDC). Successful candidates either (i) must receive a COVID-19 vaccination, or (ii) qualify for exemption from such vaccination requirements for reasons specified in applicable law. This requirement applies to all positions unless approved for reasonable accommodation based on disability, medical condition, or a sincerely held religious belief that prevents them from being vaccinated.

  • If you are able to be vaccinated, you must have all shots of your primary COVID-19 vaccine administered by January 4, 2022. You will be required to provide proof of vaccination and declare your vaccination status upon start of employment.
  • If you are unable to be fully vaccinated due to disability, medical condition or a sincerely held religious belief you will be required to apply for an exemption from this policy within 5 days of job offer in order to move forward with employment.
